Forage Breckenridge: The Most Memorable Meal I've Had in the Mountains

I don't say that lightly. I've eaten at a lot of restaurants in Breckenridge & across the country over the years.  Forage is something different. It's not just a restaurant. It's an experience that takes you through the story of Colorado, one course at a time.

I was lucky enough to be invited to a soft opening by the owner, and I left that night thinking about it for days. Still am, honestly.

What Is Forage?

Forage is a 12-course tasting menu restaurant on North Main Street in Breckenridge, helmed by three chefs who each bring something different to the table. Chef Ryan Cook has worked at Michelin-starred restaurants including Gordon Ramsay's Royal Hospital Road in London. Claire Preen is a cooking author and accomplished chocolatier who has worked under Michelin-starred chef Robert Brunel and appeared on international TV programs. Austin Maki grew up in Colorado, trained at Colorado Mountain College's culinary school, and has been working his way up through fine dining kitchens across the state ever since. Together they've built something that feels bigger than any one of them.

The concept is simple and brilliant: every dish on the menu traces a direct line to a Colorado farm, ranch, river, or meadow. Woven through each course is the history and story of Breckenridge itself. Mining, the land, the people who built this place.

There's one dining room. One communal sixteen-seat table. One seating per night, starting at 7pm. That's it. When you walk in, you're not one of a hundred tables turning over. You're a guest, and the team treats you that way.

The Dishes I Can't Stop Thinking About

Every single course was a piece of art. But two stopped me completely.

The first was the Sticky Tommy. A beef tallow candle that melts as your meal progresses, served alongside beef miso and homemade sourdough. It sounds simple until you learn that it's a nod to Tom's Baby, one of the most famous gold nuggets ever found in Breckenridge, and to the mining history that shaped this town. That kind of detail, where the food becomes a story, is rare.

The second was the Taste of the Meadow. You're given mountain herbs and wildflowers to crush yourself before being presented with a yoghurt sorbet. I'll be honest. Earthy, floral flavors aren't usually my thing. But I'm sitting here writing this with my mouth watering, so that should tell you something. It was one of the most surprising and beautiful bites I've ever had.

The Space and the Service

The space is beautiful. Not in a loud, look-at-me way. Every single detail has been thought through. It feels intentional and warm and completely unlike anything else in Breckenridge right now.

And the service? Out of this world. The team knows every dish, every story, every ingredient. They're not reciting a script. They're genuinely proud of what they're serving you, and it shows.

Who Is Forage For?

This is a special occasion restaurant. Plan your budget accordingly and plan ahead, because with 16 seats and one seating a night on Fridays and Saturdays only, reservations go fast.

It's perfect for a milestone birthday, an anniversary, a client dinner where you want to genuinely impress someone, or honestly just a night where you want to remember why living in or visiting the mountains is as good as it gets.

Forage isn't just one of the best new restaurants in Breckenridge. It's one of the best dining experiences I've had, period. Chef Ryan Cook is doing something really special here, telling the story of this place through food in a way that makes you fall in love with Breckenridge all over again.
